Florida Vegetable Recipe

| 2 cups | low-fat refried beans |
| 1 cup | broccoli, chopped small |
| 1 cup | radishes, chopped small |
| 1 cup | squash, chopped small |
| 2 cups | shredded pepper jack cheese |
| 1/4 cup | fresh scallions, chopped small |
| 1/4 cup | fresh cilantro, finely chopped |
| | tortilla chips |

Preparation
Spread refried beans at the bottom of a baking dish and sprinkle chopped broccoli, radishes and squash on the oven at 300 degrees F for 7 minutes. Remove baking dish from the oven and add cheese and tortilla chips on top and bake in the oven for 3 minutes more. After removing the baking dish from the oven, sprinkle nachos with scallions and cilantro. Add low-fat sour cream, fresh salsa and guacamole on the side. Serve immediately.
Yield 2 to 4 servings
