Yellow Squash Casserole

Vegetable-6061
Ingredients  
3 cups squash
1 medium onion, chopped
1/2 cup mayonnaise
1 egg, beaten
1/2 package Ranch salad dressing mix
1 teaspoon salt
1 cup sharp Cheddar cheese, grated
1 cup cheese crackers, crushed
 
Preparation

Boil squash and onion together, then drain. Add remaining ingredients and mix. Place in a baking dish sprayed with non-stick spray. Bake at 350 degrees F for 25 minutes. Top with crackers and bake an additional 5 minutes.
