Florida Vegetable Recipe
Eggplant Slices

eggplant, seeded and thinly sliced |

garlic cloves, finely chopped |
| 1/4 cup |
parsley, finely chopped |

olive oil to taste |
| |
Balsamic vinegar to taste |

salt, optional |
| |
pepper, optional |
| |
hot pepper flakes, optional |

capers, optional |

| Preparation |
| Very thinly slice an eggplant, preferably a
thinly shaped eggplant which yields less seeds.
Use a dry non-stick pancake grill pan or fry pan to grill the
slices on both sides. (Thus
the necessity for the slices to be very thin, so the eggplant
cooks through.)
Prepare a kind of marinade: finely chopped garlic, finely chopped
parsley; salt, pepper,
hot pepper flakes and capers are optional; olive oil and balsamic
vinegar to taste.
Layer the eggplant and marinate in a covered dish. |
