Florida Vegetable Recipe

Avocado and Tomato Salad

Ingredients
4 cups	avocado, diced medium
2 cups	grape or cherry tomatoes
2 cups	cucumber, peeled, diced medium
1 cup	red onion, diced small
4 tablespoons	cilantro, chopped
2 tablespoons	garlic, minced
2 tablespoons	lime juice
1/4 cup	olive oil
	salt and pepper to taste

Preparation
Gently toss ingredients together and serve on a bed of fresh bibb lettuce. Yield 8-10 servings
