Avocado and Tomato Salad

cucumber, peeled, diced medium |

red onion, diced small |
| 4 tablespoons |
cilantro, chopped |

garlic, minced |
| 2 tablespoons |
lime juice |

olive oil |

salt and pepper to taste |

| Preparation |
| Gently toss ingredients together and serve on a
bed of fresh bibb lettuce.
