Florida Seafood Recipe
Catfish au Poivre |

lemon juice |
1 tablespoon |
light mayonnaise |
| 1 1/2 pounds |
catfish fillets |
| 2-4 teaspoons |
coarsely cracked black pepper |

small garlic clove, minced |
| 2 tablespoons |
parsley, minced |

| Preparation |

| Preheat oven to 450 degrees F. Mix lemon juice
and mayonnaise in a shallow plate. Roll
fillets in lemon mixture to coat lightly. Place fillets in single
layer in shallow, non-stick
baking dish. Sprinkle with cracked pepper, garlic and parsley.
Bake 8-10 minutes or
until fish flakes easily with a fork.
