Fried Yellowfin Tuna Buttermilk Bites |

| 2 pounds |
yellowfin tuna steaks |
| 1 cup |
buttermilk |
| 1 cup |
biscuit mix |
| 1 teaspoon |
salt |
| |
vegetable oil for deep-frying |

| Preparation |

| Cut tuna into chunks and place in a shallow dish
in a single layer. Pour buttermilk over
tuna and let marinate for 30 minutes in the refrigerator, turning
once. Combine biscuit
mix and salt. Remove tuna from buttermilk and roll in biscuit
mix. Fry in oil at 350
degrees F for 3-5 minutes or until brown and fish flakes easily
with a fork. Drain on
paper towel. Place toothpicks in tuna bites and serve with
your favorite seafood sauce.
