Florida Seafood Recipe
Pan-Fried Tilapia |

| 2/3 cup |
cornmeal |
| 1/2 teaspoon |
salt |
| 1/2 teaspoon |
paprika |
| 2 pounds |
tilapia fillets |

vegetable oil for frying |

| Preparation |
|
| Combine cornmeal, salt and paprika. Coat fillets
with cornmeal mixture. Pour about 1/8-
inch of oil in a heavy skillet and heat to 360 degrees F. Place
fillets in skillet and fry for
4-5 minutes or until brown; turn carefully and cook an additional
4-5 minutes or until fish
flakes easily with a fork. Drain on a paper towel.
