Peppered Papaya and Shrimp Patties |

red pepper, chopped small |

garlic, minced |

jalapeno peppers, finely chopped |

| 1 pound |
shrimp, pureed |
| 3-4 cups |
breadcrumbs |

papaya, peeled, seeded, chopped |

salt and pepper to taste |
| 2 teaspoons |
lime juice |
| 2 teaspoons |
Dijon mustard |
| 1 tablespoon |
fresh cilantro or parsley, chopped |

| Preparation |

| Saute onion, red pepper, garlic and jalapeno
in 2 tablespoons of butter. Remove from
heat and cool slightly. In a bowl, mix together eggs, onion
mixture, shrimp and next six
ingredients. Form mixture into patties, approximately 3 inches
across and 1 inch thick.
Put flour on plate and lightly coat patties with flour. Melt
remaining 2 tablespoons butter
in skillet and fry patties over medium heat 3-4 minutes on
each side, or until golden and
crispy. Serve hot.
