Florida Poultry Recipe
Jerk Chicken with Sherried Mangoes

| 1/4 cup |
water |
| 1/4 cup |
lime juice |
| 1/2 cup |
sugar |
| 2 teaspoons |
ginger root, pureed |
| 1/2 pound |
chicken breast, boneless |
| 2 tablespoons |
jerk seasoning |
| 1 tablespoon |
butter |
| 2 |
mangos, sliced |
| 1 cup |
dry sherry |

| Preparation |
| Bring water, lime juice, sugar and ginger to
a boil. Cool and add chicken, marinate 2 to
24 hours. Remove chicken from marinade and coat with jerk seasoning
and saute‚ in
butter. Remove chicken from pan and add mango and sherry; cook
until mango is heated
thoroughly. |
