Florida Dessert Recipe

Hamantashen

Ingredients
4large eggs
1/2 cup oil
1 1/2 cups natural sugar
1medium orange rind, grated
4 cupsnatural unbleached flour
2 teaspoons baking powder
1 teaspoon natural vanilla
1/4 teaspoonkosher salt
 
Preparation
Beat eggs, add sugar gradually. Sift flour with baking powder and salt, and add to egg mixture, alternating with oil. Add orange rind last. Form into soft dough. Form into a ball and wrap in floured waxed paper. Refrigerate for several hours or overnight. Break off a piece large enough to roll into a ball about the size of a golf ball. Roll and pat it down and cut into a circle about 2-3 inches in diameter, on top of a floured piece of waxed paper (you may want to flour your hands a little bit, too). Fill with your favorite filling.

Mango Filling
Use 1/2 teaspoon of orange marmalade and a small slice of ripe fresh mango per cookie. Roll up the sides and pinch corners together in the shape of a triangle. Place on greased cookie sheet and bake at 350 degrees F for 15-25 minutes, or until lightly browned. Cool on racks.

Guava and Cream Cheese Filling
Use 1/2 teaspoon guava paste and 1/2 teaspoon of cream cheese per cookie. Roll up the sides and pinch corners together in the shape of a triangle. Place on greased cookie sheet and bake at 350 degrees F for 15-25 minutes, or until lightly browned. Cool on racks.

6 to 12 servings
