Florida Dessert Recipe

| Ingredients |
| 4 | large eggs |
| 1/2 cup | oil |
| 1 1/2 cups | natural sugar |
| 1 | medium orange rind, grated |
| 4 cups | natural unbleached flour |
| 2 teaspoons | baking powder |
| 1 teaspoon | natural vanilla |
| 1/4 teaspoon | kosher salt |

| Preparation |
| Beat eggs, add sugar gradually. Sift flour with baking powder and salt, and add to egg mixture, alternating with oil. Add orange rind last. Form into soft dough. Form into a ball and wrap in floured waxed paper. Refrigerate for several hours or overnight. Break off a piece large enough to roll into a ball about the size of a golf ball. Roll and pat it down and cut into a circle about 2-3 inches in diameter, on top of a floured piece of waxed paper (you may want to flour your hands a little bit, too). Fill with your favorite filling.
Mango Filling
Use 1/2 teaspoon of orange marmalade and a small slice of ripe fresh mango per cookie. Roll up the sides and pinch corners together in the shape of a triangle. Place on greased cookie sheet and bake at 350 degrees F for 15-25 minutes, or until lightly browned. Cool on racks.
Guava and Cream Cheese Filling
Use 1/2 teaspoon guava paste and 1/2 teaspoon of cream cheese per cookie. Roll up the sides and pinch corners together in the shape of a triangle. Place on greased cookie sheet and bake at 350 degrees F for 15-25 minutes, or until lightly browned. Cool on racks.
