Florida Orange Meringue Pie |

cream substitute (coffee creamer) plus 1 cup water |

egg yolks, beaten |
| 1/2 cup |
fresh orange juice |
| 2 tablespoons |
butter |
| 1 9-inch |
pie shell, baked |

| Preparation |
| Combine sugar, cornstarch, salt. Add milk gradually and cook over low, heat until thick and clear, about 6 minutes stirring constantly. Add beaten egg yolks and cook over low heat 6 minutes longer continuing to stir. Remove from heat; add orange juice and butter. Cool. Pour into pastry shell. Top with meringue; bake at 400 degrees F until golden brown.
