Florida Breakfast Recipe
Blueberry Pancakes |

| 1 cup |
pancake mix |
| 3/4 cup |
milk |
| 1 tablespoon |
oil |
| 1 |
egg |
| 2-4 tablespoons |
hot water |
| 1 pint |
blueberries |

| Preparation |
| In large mixing bowl, combine pancake mix, milk, oil and egg. Beat well with a wire whisk.
Heat large skillet, covered lightly with oil. Add hot water to the pancake mix until desired
thinness. Pour mix into skillet to make one large pancake. Sprinkle with blueberries. When
pancake is brown, turn and brown the other side. Remove from pan, place on plate and serve
immediately. Optional toppings: warm, melted butter, warm syrup.
